In a bowl, combine hoisin sauce, soy sauce, honey, rice wine, oyster sauce, five-spice powder, garlic, ginger, and food coloring (if using). Stir until well incorporated.

Place chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for 2-3 hours to allow flavors to penetrate.

Preheat your grill to medium-high heat or your oven to 190°C (375°F).

For grilling: Grill the chicken for 20-25 minutes, turning occasionally and basting with extra marinade, until internal temperature reaches 74°C (165°F). For roasting: Place chicken on a baking sheet and roast for 25-30 minutes, basting occasionally, until golden and cooked through.

Slice the chicken, garnish with green onions and sesame seeds. Serve hot with steamed rice, noodles, or vegetables.
