# Ingredients:

01 - 1 flour tortilla
02 - 2 large eggs
03 - 1/2 cup Mexican blend cheese
04 - 1 tbsp unsalted butter
05 - 1/4 tsp salt, to taste

# Instructions:

01 - Crack eggs into a bowl. Add salt to taste. Whisk until the texture is smooth. Set aside.
02 - Preheat a skillet with butter over medium heat.
03 - Pour egg mixture into the skillet, cooking until the center is still a bit runny and the edges are cooked.
04 - Sprinkle a handful of cheese on top of the eggs.
05 - Add tortilla on top, allowing the egg and cheese to stick to the tortilla.
06 - Flip it over and sprinkle cheese on half the egg.
07 - Fold the tortilla over to create a half circle. Brown both sides until crisp.
08 - Serve warm alongside sour cream, salsa, or guacamole.
