Heat a skillet or griddle over medium heat.

Butter one side of each slice of bread.

On the unbuttered side, layer Irish cheddar and mozzarella cheese. Sprinkle salt and pepper to taste. Top with another slice of bread, buttered side facing out.

Grill each sandwich in the skillet for about 3-4 minutes on each side until golden and the cheese is melted.

Remove from heat, slice, and serve immediately.
