Mozzarella Stuffed Onion Rings (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2 large onions, sliced into 1/2 inch rings
02 - 1 cup mozzarella cheese sticks, cut into smaller sticks

→ Coating Mixture

03 - 2 cups almond flour
04 - 1 tablespoon garlic powder
05 - 1 tablespoon paprika
06 - 1 teaspoon salt
07 - 1/2 teaspoon black pepper

→ Egg Wash

08 - 2 large eggs, beaten
09 - 1/4 cup milk or almond milk

# Instructions:

01 - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - Carefully separate the onion slices into individual rings. Select pairs of rings with a gap between them that can hold a mozzarella stick. Insert mozzarella sticks inside the gap of each pair, pressing together slightly to secure.
03 - In a shallow bowl, mix the almond flour, garlic powder, paprika, salt, and black pepper. In another shallow bowl, whisk together the beaten eggs and milk.
04 - Dip each mozzarella-filled onion ring into the egg mixture, ensuring it is fully coated. Then dip into the almond flour mixture, pressing the coating onto the ring to ensure it adheres well.
05 - Place the prepared rings onto the lined baking sheet in a single layer. Bake for 15-20 minutes, or until the coating is golden and the cheese is melted and bubbly.
06 - Allow rings to cool for a few minutes on the baking sheet before serving.

# Notes:

01 - These crispy, cheesy rings make a perfect appetizer or game day snack.
02 - For best results, ensure the mozzarella sticks are firmly secured between onion rings before coating.
