Rinse the oranges and place them in a pot. Cover with water and simmer on low heat for 1 hour.

After 1 hour, drain the oranges and transfer them to a blender. Blend until smooth.

Preheat the oven to 350°F (175°C) and grease a 9-inch springform cake pan.

In a large bowl, combine the orange puree, eggs, honey, ground pistachios, almond flour, vanilla extract, and baking soda. Mix until smooth and well combined.

Pour the batter into the prepared pan and bake for 1 hour. If the top starts to brown too quickly, cover with foil. The cake is done when a toothpick inserted into the center comes out clean.

In a small saucepan, combine ½ cup of orange juice with 2 tablespoons of honey. Bring to a boil, then reduce the heat and simmer until the liquid has reduced by half. Remove from heat and set aside.

Once the cake has cooled slightly, brush the orange and honey glaze over the top. Allow the cake to cool completely before removing from the pan and serving.
