# Ingredients:

01 - 8 oz (226 g) Cream Cheese, softened to room temperature
02 - ¼ cup (50 g) Granulated Sugar
03 - ½ tsp Vanilla Extract
04 - 1 cup Fresh Raspberries, washed and dried
05 - 12 Mini Pastry Cups or Phyllo Dough Cups
06 - Powdered Sugar for garnish (optional)

# Instructions:

01 - In a medium mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Using an electric mixer, blend the ingredients on medium speed until smooth and creamy. Taste and adjust sugar if necessary.
02 - If using pre-made pastry or phyllo cups, place them on a baking sheet. For homemade phyllo dough cups, lightly grease a muffin tin and shape the dough into each cup, then bake for 5-7 minutes or until golden and crispy. Let them cool before adding the filling.
03 - Using a spoon or a piping bag, carefully fill each pastry cup with the cream cheese mixture. Aim for about 1-2 teaspoons per cup, depending on the size. The filling should be slightly below the rim to allow space for the raspberries.
04 - Gently press a fresh raspberry into the center of each filled cup. For extra visual appeal, consider adding a small mint leaf beside the raspberry or drizzling a bit of raspberry sauce over the top.
05 - Dust a light sprinkle of powdered sugar over the assembled bites for a beautiful finish.
06 - Place the bites in the refrigerator for at least 20 minutes before serving to let the flavors meld together. Serve them chilled for the best taste and texture.
