Quarter the ripe cherry tomatoes. In a bowl, mix the quartered tomatoes with 1 teaspoon olive oil, Italian seasoning, salt, and pepper until evenly coated.

If you have an Air Fryer grill pan, use it for this recipe to keep your Air Fryer clean. Otherwise, a cake pan or pizza pan works well too.

Preheat your Air Fryer to 240°F (115°C) for 3 minutes. Arrange the seasoned tomatoes in a single layer on your chosen pan.

Cook for approximately 45 minutes, checking the tomatoes every 10 minutes until they reach your desired level of dehydration.

Remember that larger tomatoes contain more juice and will take longer to dehydrate. Extend cooking time if you prefer drier tomatoes.

While tomatoes are cooking, take a glass bowl and mix the remaining tablespoon of olive oil with an additional teaspoon of Italian seasoning.

Use silicone tongs to carefully remove the tomatoes from the Air Fryer and transfer them to a glass jar for storage.
