# Ingredients:

01 - 2 large russet potatoes
02 - 1 tablespoon olive oil
03 - 1 teaspoon paprika
04 - 1 teaspoon garlic powder
05 - 1/2 cup freshly grated parmesan cheese
06 - Salt and black pepper to taste

# Instructions:

01 - Cut each potato lengthwise into 1/4 inch thin slices, then cut each slice into 1/4 inch fries. A mandoline makes this process much easier and gives you consistent results.
02 - Place the cut potatoes in a bowl of cold water and let them soak for 1-2 hours. This removes excess starch and ensures extra crispy fries.
03 - About 5 minutes before cooking, preheat your air fryer to 400°F (200°C).
04 - Drain the potatoes and pat them dry. Toss with olive oil, salt, pepper, garlic powder, parmesan cheese, and paprika. Working in batches if needed, arrange in a single layer in the air fryer basket. Cook for 15-20 minutes, tossing halfway through for even browning.
05 - If desired, finish with an extra sprinkle of parmesan cheese, garlic powder, and fresh parsley before serving.
