# Ingredients:

01 - 3 medium zucchini

→ Seasoning

02 - 1 teaspoon salt, or to taste
03 - 1 teaspoon black pepper, or to taste
04 - 1 tablespoon Italian seasoning blend

→ Coating

05 - 1/2 cup all-purpose flour
06 - 2 large eggs
07 - 1 cup breadcrumbs (panko or Italian style)
08 - 1/3 cup Parmesan cheese, freshly grated
09 - 2 tablespoons cooking oil spray

# Instructions:

01 - Set up your breading station: On a plate, mix flour with salt, pepper, and Italian seasoning. In a bowl, whisk the eggs until smooth. In another bowl, combine breadcrumbs with Parmesan cheese.
02 - Cut your zucchini into 3-inch fry shapes. Dip each piece first in the seasoned flour, then egg (letting excess drip off), and finally coat in the Parmesan-breadcrumb mixture, pressing gently to adhere.
03 - Lightly spray your air fryer basket with oil. Arrange the coated zucchini fries in a single layer, being careful not to overcrowd. Give them a light spray of oil and air fry at 400°F for 9 minutes until golden and crispy.
04 - Remove the crispy fries carefully from the air fryer basket and serve them hot, enjoying the perfect combination of Italian seasonings and Parmesan in every crunchy bite.
