Apple Pie Cookies Delight (Print Version)

# Ingredients:

→ Apple filling

01 - 1/4 cup (60g) unsalted butter
02 - 1 & 1/2 cups (160g) peeled, cored, and diced Granny Smith apples
03 - 1/2 cup (100g) packed brown sugar
04 - 2 teaspoons ground cinnamon
05 - 1 tablespoon cornstarch
06 - 1 tablespoon water

→ Thumbprint cookie dough

07 - 2 & 1/2 cups (300g) all-purpose flour
08 - 1 teaspoon baking powder
09 - 1/2 teaspoon salt
10 - 1 cup (225g) unsalted butter, softened to room temperature
11 - 1/2 cup (100g) packed brown sugar
12 - 1 large egg, at room temperature
13 - 1 large egg yolk, at room temperature
14 - 1 teaspoon pure vanilla extract

→ Cinnamon sugar coating

15 - 1/4 cup (50g) granulated sugar
16 - 1 teaspoon ground cinnamon

# Instructions:

01 - In a medium skillet, combine butter, diced apples, brown sugar, and cinnamon over medium heat. Cook while stirring until the butter and sugar melt and the mixture starts to boil. Reduce heat to a gentle simmer if splattering occurs. Cook for about 5 minutes until the liquid reduces slightly and apples soften. Mix cornstarch and water in a small bowl, then pour over the apple mixture. Cook, stirring constantly, for an additional minute until the sauce thickens. Transfer filling to a heat-safe bowl and let cool completely.
02 - Preheat the oven to 175°C (350°F). Line two large baking sheets with parchment paper. Whisk together flour, baking powder, and salt in a medium bowl. In a large bowl, cream butter and brown sugar using an electric mixer or wooden spoon until smooth and lightened in color. Add egg, egg yolk, and vanilla extract, mixing until combined. Gradually incorporate dry ingredients and fold until no streaks of flour remain.
03 - In a shallow bowl, mix sugar and cinnamon. Scoop out 3-tablespoon-sized portions of dough, rolling each ball in the cinnamon sugar mixture. Place dough balls on prepared baking sheets, leaving 2 inches between each. Use your thumb or a measuring teaspoon to press an indent into each cookie, filling the center with about 1 teaspoon of cooled apple filling.
04 - Bake cookies in the center of the preheated oven for 10 to 12 minutes, until bubbling at the center and golden brown at the edges. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Optionally drizzle with caramel sauce before serving.

# Notes:

01 - Granny Smith apples work best for this recipe, but other varieties like Braeburn, Fuji, Golden Delicious, or Honeycrisp are also good choices. Avoid Red Delicious apples as they break down too much when cooked.
