Authentic Birria Tacos (Print Version)

# Ingredients:

→ Chili Sauce/Marinade

01 - 2 guajillo chilis, stemmed and seeded
02 - 2 ancho chilis, stemmed and seeded
03 - 2 teaspoons chipotle in adobo sauce
04 - 1 ½ cups beef broth or water

→ Birria Stew

05 - 1 lb beef chuck roast or brisket
06 - 1 teaspoon salt for searing
07 - ½ teaspoon black pepper for searing
08 - ½ red or white onion
09 - 4-5 garlic cloves, finely chopped
10 - 1 teaspoon vinegar
11 - ½ teaspoon ground cumin
12 - ¼ teaspoon ground coriander
13 - ¾ teaspoon salt
14 - ¼ teaspoon Mexican oregano (optional)
15 - 1 bay leaf
16 - ½ cup beef broth

→ For Assembly

17 - Flour tortillas
18 - Cheese

# Instructions:

01 - Blend chilis with broth until smooth.
02 - Sear seasoned beef chunks. Cook onion and garlic, add vinegar. Return meat with sauce and spices. Pressure cook 55-75 minutes.
03 - Dip tortillas in stew fat, fry with meat and cheese until crispy.
