Cut the bok choy in half lengthwise. If the bok choy is large, cut it in half again for more manageable pieces.

Bring a pot of water to a simmer. Add 1 tbsp of oil and 1.5 tsp of salt to the water. Blanch the bok choy for 3-4 minutes until soft yet still maintaining crispness. Remove and set aside.

In a pan, combine minced garlic, vegetarian oyster sauce, soy sauce, sugar, and sesame oil. Simmer for 1-2 minutes until the sugar has completely dissolved.

Arrange the blanched bok choy on a serving plate and drizzle the hot garlic sauce over the top.
