01 - 4 cups broccoli florets, chopped (fresh or frozen, cooked until tender)
02 - 1 cup sharp cheddar cheese, shredded
03 - 1/2 cup Parmesan cheese, grated
04 - 1/4 cup all-purpose flour or almond meal
05 - 2 large eggs, beaten
06 - 1/2 medium onion, finely chopped
07 - 2 cloves garlic, minced
08 - Salt and pepper to taste

# Instructions:

01 - Steam or boil the broccoli florets for 5-7 minutes until tender. Drain well and allow to cool slightly to prevent excess moisture.
02 - Finely chop the cooled broccoli with a knife or briefly pulse in a food processor. In a large mixing bowl, combine the chopped broccoli with cheddar cheese, Parmesan cheese, flour or almond meal, beaten eggs, chopped onion, and minced garlic. Season with salt and pepper and mix thoroughly until the mixture holds together when pressed.
03 - Using your hands, shape the mixture into patties approximately 2-3 inches in diameter and 1/2 inch thick. The mixture should yield 8-10 patties.
04 - Heat olive oil in a large frying pan over medium heat. Cook patties for 3-4 minutes per side until golden brown and crispy. Transfer to paper towel-lined plate to drain excess oil.
05 - Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper. Place patties on the sheet and bake for 15-20 minutes, flipping halfway through, until golden and crisp.
06 - Serve warm with preferred dipping sauces or as a side dish.

01 - For a gluten-free version, use almond meal or gluten-free flour instead of all-purpose flour.
02 - Drain broccoli thoroughly to prevent soggy patties.
