Brussels Sprouts Gratin (Print Version)

01 - 3 tablespoons butter
02 - 1/4 cup sliced shallots (approximately 2 shallots)
03 - 2 cloves garlic, minced
04 - 900g fresh Brussels sprouts, cored and halved
05 - 1/4 teaspoon kosher salt
06 - Pinch of black pepper
07 - 1/4 teaspoon paprika
08 - 3/4 cup heavy cream
09 - 3/4 cup shredded sharp white cheddar cheese (freshly grated preferred)
10 - 1/2 cup shredded Gruyere cheese (freshly grated preferred)
11 - 6 slices cooked bacon, crumbled (approximately 1/2 cup)
12 - Fresh parsley, minced, for garnish

# Instructions:

01 - Preheat oven to 190°C (375°F). Add butter to a large oven-safe pan or skillet, and heat over medium heat. Add Brussels sprouts, shallots and garlic, seasoning with kosher salt, black pepper and paprika. Sauté, stirring occasionally, for 5-8 minutes.
02 - Remove pan from heat and pour in heavy cream. Sprinkle shredded cheddar and Gruyere cheese evenly over the Brussels sprouts. Top with crumbled bacon.
03 - Bake for approximately 12 minutes, until cheese is melted and bubbly. Sprinkle with additional black pepper and minced parsley before serving.

# Notes:

01 - For best results, use freshly grated cheese rather than pre-shredded varieties which contain anti-caking agents.
