Buffalo Chicken Meatballs (Print Version)

# Ingredients:

01 - 1 pound lean ground chicken
02 - 2 cloves garlic, minced
03 - 1 large egg
04 - ½ cup Italian-style breadcrumbs
05 - 1 tablespoon ranch seasoning
06 - ¼ cup blue cheese crumbles
07 - 2 tablespoons unsalted butter
08 - 1 cup Buffalo sauce

# Instructions:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
02 - In a large bowl, combine ground chicken, minced garlic, egg, breadcrumbs, and ranch seasoning. Mix thoroughly with a fork until all ingredients are well incorporated.
03 - Using a cookie portion scoop or your hands, portion the mixture into equal-sized balls.
04 - Press a small cube of blue cheese into the center of each meatball. Fold the mixture around the cheese and press together, ensuring the cheese is completely covered. Roll into a ball shape.
05 - Place meatballs on the prepared baking sheet and bake for 16-18 minutes or until golden brown and cooked through (internal temperature of 74°C/165°F).
06 - Transfer the cooked meatballs to a slow cooker. Add butter and buffalo wing sauce. Heat on high setting for about 20 minutes until hot, then reduce to warm setting while serving.
