# Ingredients:

01 - 3 cups all-purpose flour
02 - 1 packet (7g) active dry yeast
03 - 1 teaspoon sugar
04 - 1 teaspoon salt
05 - 1 cup lukewarm water
06 - 2 tablespoons vegetable oil

07 - 2 large onions, finely chopped
08 - 2 tablespoons poppy seeds

# Instructions:

01 - In a large bowl, whisk together the flour, yeast, sugar, and salt. Make a well in the center and pour in the lukewarm water and oil. Start mixing with a wooden spoon until everything comes together, then turn the shaggy dough out onto a floured surface. Knead with your hands for about 10 minutes until the dough becomes smooth, elastic, and springs back when poked. Your arms might get a little tired, but it's worth it!
02 - Lightly oil a clean bowl, place your dough ball inside, and turn it once to coat with oil. Cover the bowl with a damp kitchen towel and find a warm, draft-free spot in your kitchen. Let the dough rest and rise until it doubles in size, which takes about an hour depending on how warm your kitchen is.
03 - While your dough is doing its magical rising thing, heat the oil in a large skillet over medium heat. Toss in your chopped onions and stir to coat them with oil. Now comes the patience part - cook them slowly, stirring occasionally, for about 15-20 minutes until they transform into sweet, golden-brown deliciousness. Season with salt and pepper, then set aside to cool slightly.
04 - When your dough is nearly doubled, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
05 - Once your dough has doubled, gently punch it down to release the air bubbles. Divide it into 8 equal pieces (a bench scraper works great for this). Roll each piece into a ball, then flatten and stretch it into a disk about 1/4-inch thick. You can use your hands or a rolling pin - whatever works best for you.
06 - Place your flatbread disks on the prepared baking sheet, leaving a little space between them. Spread each disk with those gorgeous caramelized onions and sprinkle generously with poppy seeds. Slide the baking sheet into your preheated oven and bake for 15-20 minutes, until the edges turn golden brown and the flatbreads are cooked through.
