In a large bowl, whisk together the flour, yeast, sugar, and salt. Make a well in the center and pour in the lukewarm water and oil. Start mixing with a wooden spoon until everything comes together, then turn the shaggy dough out onto a floured surface. Lightly oil a clean bowl, place your dough ball inside, and turn it once to coat with oil. Cover the bowl with a damp kitchen towel and find a warm, draft-free spot in your kitchen. Let the dough rest and rise until it doubles in size, which takes about an hour depending on how warm your kitchen is.

While your dough is doing its magical rising thing, heat the oil in a large skillet over medium heat. Toss in your chopped onions and stir to coat them with oil. Now comes the patience part - cook them slowly, stirring occasionally, for about 15-20 minutes until they transform into sweet, golden-brown deliciousness. Season with salt and pepper, then set aside to cool slightly.

When your dough is nearly doubled, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Once your dough has doubled, gently punch it down to release the air bubbles. Divide it into 8 equal pieces (a bench scraper works great for this). Roll each piece into a ball, then flatten and stretch it into a disk about 1/4-inch thick. You can use your hands or a rolling pin - whatever works best for you.

Place your flatbread disks on the prepared baking sheet, leaving a little space between them. Spread each disk with those gorgeous caramelized onions and sprinkle generously with poppy seeds. Slide the baking sheet into your preheated oven and bake for 15-20 minutes, until the edges turn golden brown and the flatbreads are cooked through.
