Add chopped carrots and soft dates into a food processor and pulse for about 1 minute until carrots and dates are cut into small pieces.

Add pecans, coconut, oats, cinnamon, nutmeg, ginger, peanut butter, vanilla paste and maple syrup. Pulse through until all of the ingredients combine and create a sticky texture. Stop occasionally to scrape down the mixture from the edges.

Transfer the mixture into a bowl. Using a small cookie scoop (approximately 1 tbsp in size), portion out the mixture and roll between your palms to form small bites.

Consume immediately or store in containers for later use. These energy bites keep best when refrigerated.
