Carrot Cake Energy Bites (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1/2 cup chopped carrots
02 - 1/4 cup soft pitted dates
03 - 1/2 cup pecans
04 - 2 tbsp desiccated coconut
05 - 1/2 cup oats

→ Spices and Flavorings

06 - 1/2 tsp cinnamon
07 - 1/2 tsp nutmeg
08 - 1/4 tsp ginger powder
09 - 1 tsp vanilla bean paste or vanilla extract

→ Binding Agents

10 - 3 tbsp crunchy peanut butter
11 - 1/2 tbsp maple syrup

# Instructions:

01 - Add chopped carrots and soft dates into a food processor and pulse for about 1 minute until carrots and dates are cut into small pieces.
02 - Add pecans, coconut, oats, cinnamon, nutmeg, ginger, peanut butter, vanilla paste and maple syrup. Pulse through until all of the ingredients combine and create a sticky texture. Stop occasionally to scrape down the mixture from the edges.
03 - Transfer the mixture into a bowl. Using a small cookie scoop (approximately 1 tbsp in size), portion out the mixture and roll between your palms to form small bites.
04 - Consume immediately or store in containers for later use. These energy bites keep best when refrigerated.

# Notes:

01 - These energy bites are perfect for on-the-go snacking and provide a nutrient-dense alternative to processed sweets.
02 - The texture should be sticky enough to hold together but not too wet. If mixture is too dry, add a little more peanut butter.
