# Ingredients:

01 - 1 cup unsalted butter, softened
02 - 3/4 cup granulated sugar
03 - 1 large egg
04 - 1 teaspoon vanilla extract
05 - 1/2 teaspoon almond extract
06 - 2 cups all-purpose flour
07 - 1/2 teaspoon baking soda
08 - 1/4 teaspoon salt
09 - 1/2 cup maraschino cherries, chopped
10 - 1/4 cup maraschino cherry juice
11 - 1/2 cup white chocolate chips (optional)

12 - 12 whole maraschino cherries

# Instructions:

01 - Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
02 - Cream together the butter and granulated sugar until light and fluffy (3-4 minutes). Add the egg and mix in the vanilla and almond extracts.
03 - Whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
04 - Fold in the chopped maraschino cherries, cherry juice, and white chocolate chips (if using).
05 - Drop rounded spoonfuls of dough onto the baking sheets, spacing them 2 inches apart. Press a whole maraschino cherry into the center of each dough ball.
06 - Bake for 10-12 minutes, until the edges are lightly golden. Let the cookies cool on the baking sheets before transferring to a wire rack.
