Chicken Rosa Maria Dinner (Print Version)

# Ingredients:

01 - 2 tablespoons olive oil
02 - 4 chicken breasts
03 - 1 teaspoon salt
04 - 1/2 teaspoon pepper
05 - 6 tablespoons butter
06 - 1/2 onion, diced
07 - 4 garlic cloves, minced
08 - 1 - 8 ounce package mushrooms, sliced
09 - 3 ounces prosciutto, cut into bite-sized pieces
10 - 1/2 cup freshly squeezed lemon juice (approximately 1-2 lemons)
11 - 4 slices fontina cheese
12 - Fresh basil, sliced into ribbons

# Instructions:

01 - Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 minutes per side, 10 minutes total. Sprinkle with salt and pepper. Remove from the pan, cover, and set aside.
02 - Melt butter in the pan and add diced onion. Reduce heat to medium and cook for 4 minutes. Add minced garlic and mushrooms, cooking for an additional 2 minutes.
03 - Add prosciutto to the pan and cook until crispy.
04 - Return the chicken breasts to the pan. Stir to coat with onions, mushrooms, and crispy prosciutto.
05 - Sprinkle freshly squeezed lemon juice over the chicken.
06 - Top each chicken breast with a slice of fontina cheese. Allow the cheese to melt on top of the chicken. Garnish with fresh basil ribbons before serving.
