Chile Colorado with Beef (Print Version)

# Ingredients:

01 - 2 lbs beef stew meat
02 - 1 ½ cups beef broth
03 - 2 tablespoons chipotle adobo sauce
04 - 1 can diced green chiles
05 - 2 tablespoons apple cider vinegar
06 - 2 tablespoons tomato paste
07 - 1 ½ tablespoons chili powder
08 - 1 teaspoon dried oregano
09 - ½ teaspoon ground cumin
10 - 3 garlic cloves, minced
11 - ½ cup yellow onion, chopped
12 - ½ teaspoon salt
13 - 1 bay leaf

# Instructions:

01 - Add all ingredients except for the beef to your slow cooker. Stir to fully combine.
02 - Add beef to the slow cooker and stir to coat the meat evenly in the sauce.
03 - Cook on low heat for 7-8 hours until the beef becomes fork tender.
04 - Serve with tortillas, rice, and beans. Enjoy!

01 - Cooking on low heat allows the beef to become tender and infused with the sauce.
