Chocolate Caramel Easter Eggs (Print Version)

# Ingredients:

01 - 1 1/3 cups quality melting chocolate
02 - 12 tablespoons thick caramel
03 - Festive sprinkles
04 - Easter egg silicone molds

# Instructions:

01 - Start by melting your chocolate according to package instructions - either microwave in short bursts, stirring between each, or use a double boiler method. Once smooth, use a spoon to coat the inside of each egg cavity in your silicone mold. Make sure the layer is medium-thick and even, coating all the way up the sides. You want it sturdy enough to hold the caramel, but not so thick that you can't fit the filling.
02 - While the chocolate is still a bit melty but not hot (this prevents the caramel from melting through), spoon about 1 to 1.5 tablespoons of thick caramel into each chocolate shell. The exact amount will depend on the size of your mold and how thick your chocolate layer is. Be careful not to overfill - you need to leave enough room to seal the egg with another layer of chocolate on top.
03 - Use a small spoon to gently smooth out the caramel filling so it's level inside each egg. Then carefully cap each filled egg with another layer of chocolate, making sure to completely cover the caramel and connect with the chocolate edges to fully seal. Smooth the tops as best you can for a clean finish.
04 - Place the filled mold into the freezer for about 10-20 minutes, just long enough for the chocolate to completely harden. The freezer works faster than the refrigerator and helps ensure a clean release from the mold.
05 - Once fully set, carefully flex the silicone mold to loosen the eggs, then gently pop each one out onto a cold plate or tray. Work one egg at a time for the decoration step - drizzle each with a little of your remaining melted chocolate (rewarm if needed) and immediately sprinkle with festive sprinkles before the drizzle sets. The chocolate sets up quickly so you'll need to add the sprinkles right away.
