Classic Beef Mushroom Pie (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 pounds beef (chuck roast or sirloin), cut into 1-inch cubes
02 - 8 ounces mushrooms (button or cremini), sliced
03 - 1 large onion, diced
04 - 2 cloves garlic, minced
05 - 2 medium carrots, diced
06 - 2 cups beef broth
07 - 1 cup red wine (can skip if you prefer)
08 - 1/4 cup all-purpose flour
09 - 1 teaspoon fresh thyme
10 - 2 bay leaves
11 - Salt and pepper, to taste

→ Crust

12 - 1 double pie crust (grab one from the store or make your own)
13 - 1 egg, beaten (for that golden top)

# Instructions:

01 - Heat up some oil in a big pot over medium heat. Toss in those onions and garlic, cooking until they're soft and translucent. Add your beef chunks and brown them all over. Then throw in the carrots and mushrooms and let everything cook together for about 5 minutes.
02 - Sprinkle the flour over everything in the pot and stir it around really well. Slowly pour in the beef broth and wine (if you're using it), stirring as you go. Add the thyme, bay leaves, and season with salt and pepper. Let it bubble away for 10-15 minutes until it thickens up nicely. Take it off the heat and let it cool down a bit.
03 - Heat your oven to 400°F (200°C). Roll out the bottom crust and tuck it into your pie dish. Pour in all that delicious filling you made. Cover it up with the top crust, pinch the edges together to seal it, and cut a few slits in the top so steam can escape. Brush the top with beaten egg to give it a gorgeous golden finish.
04 - Slide that pie into the oven and bake for 30-35 minutes until the crust turns a beautiful golden brown. Once it's done, let it rest for about 10 minutes before cutting into it - trust me, this helps the filling set up so it doesn't run all over your plate.

# Notes:

01 - This classic beef pie is perfect for Sunday dinners or special occasions when you want something hearty and comforting.
02 - Feel free to add peas or other vegetables for extra flavor and nutrition.
03 - Letting the filling cool slightly before assembly helps maintain a flaky crust.
