# Ingredients:

→ For the Zucchini Fries

01 - 3 medium zucchinis
02 - 2 egg whites mixed with 1 teaspoon Cajun seasoning
03 - 1 cup Parmesan cheese mixed with 1 tablespoon Cajun seasoning

→ For the Cajun Aioli (optional)

04 - 1/2 cup mayonnaise
05 - 2 tablespoons heavy cream
06 - 2 tablespoons lemon juice
07 - 1 tablespoon Cajun seasoning
08 - 2 egg yolks, beaten

# Instructions:

01 - Cut zucchinis into thin fry-like strips. Allow the zucchini strips to air dry for 15 minutes or pat gently with paper towels to release excess moisture.
02 - Heat oven to 425°F and line a baking sheet with parchment paper.
03 - In a shallow bowl, stir together the egg whites and Cajun seasoning. In another shallow bowl, stir together the Parmesan cheese and Cajun seasoning.
04 - Dip zucchini strips in the egg whites, then dredge in Parmesan cheese mixture. Arrange them on a baking sheet in a single layer.
05 - Bake for about 30 minutes, flipping halfway through, until crispy and golden brown.
06 - Heat mayonnaise, heavy cream, lemon juice, and Cajun seasoning in a saucepan over medium heat until warmed through. Remove from heat and slowly temper in the egg yolks by adding them one teaspoon at a time, stirring vigorously until fully incorporated.
07 - Serve the zucchini fries with the prepared Cajun aioli, if desired.

# Notes:

01 - Use uniform strips. Cut the zucchini into similar-sized strips to ensure even cooking.
02 - Don't stack the zucchini fries on the baking sheet. Overcrowding will cause steaming instead of achieving a crispy texture.
03 - Flip the zucchini fries halfway through the baking time to ensure all sides are crispy.
