Deep Dish Cookie Pie (Print Version)

# Ingredients:

→ Base

01 - 500g white beans or garbanzo beans (2 cans, drained)
02 - 240g quick oats or almond flour (1 cup)
03 - 60g applesauce or yogurt (1/4 cup)
04 - 45ml oil or 60g nut butter (3 tbsp oil or 1/4 cup nut butter)
05 - 10ml pure vanilla extract (2 tsp)

→ Leavening

06 - 10g baking powder (2 tsp)
07 - 2.5g baking soda (1/2 tsp)
08 - 2.5g salt (1/2 tsp)

→ Sweeteners and Mix-ins

09 - 300g brown sugar or unrefined sugar (1 1/2 cups)
10 - 170g chocolate chips (1 cup)

# Instructions:

01 - Drain and rinse beans very thoroughly to remove any canned flavor.
02 - In a food processor, blend all ingredients except chocolate chips until completely smooth and homogeneous.
03 - Fold chocolate chips into the batter until evenly distributed.
04 - Pour batter into a greased 9 or 10-inch springform pan, spreading evenly.
05 - Bake at 180°C (350°F) for 35 minutes until the edges are set but center remains slightly soft.
06 - Allow to stand for at least 10 minutes before removing from the pan. Serve warm or at room temperature.

# Notes:

01 - For best texture results, use a food processor rather than a blender to create the batter.
02 - This dessert is particularly popular at gatherings and produces a gooey, cookie-like texture when served warm.
