English Muffin Breakfast Pizza (Print Version)

# Ingredients:

01 - 1 package of English muffins
02 - 8 eggs
03 - 1 lb breakfast sausage
04 - 8 oz mild cheddar cheese, thinly sliced

05 - 2 cups milk
06 - 1/4 cup sausage drippings or butter
07 - 1/4 cup flour
08 - 1/2 teaspoon salt, or to taste
09 - 1/4 teaspoon pepper, or to taste

# Instructions:

01 - Cook the breakfast sausage in a cast iron pan until well done. Remove from the pan and pour off all but 1/4 cup of fat.
02 - Add the flour to the sausage drippings in the skillet. Cook and stir over medium heat for 5 to 10 minutes or until the mixture starts to turn golden. This removes the raw flour flavor.
03 - Slowly add milk to the skillet, stirring constantly. Cook the gravy until it boils and thickens.
04 - Lightly toast the English muffins in a toaster while preparing the gravy.
05 - Scramble the eggs in a non-stick skillet. Add a small dash of milk to make them fluffier, if desired.
06 - Turn the oven broiler on high. Place the toasted English muffins open-faced on a baking sheet. Add sawmill gravy, scrambled eggs, a slice of cheese, and sausage to each muffin half.
07 - Toast the assembled pizzas under the broiler until the cheese is bubbly and melted.
