# Ingredients:

→ Southern Fried Chicken

01 - 4 boneless, skinless chicken thighs (or breasts)
02 - 250ml buttermilk
03 - 1 teaspoon salt
04 - 1 teaspoon black pepper
05 - 1 teaspoon garlic powder
06 - 1 teaspoon paprika
07 - 1 teaspoon cayenne pepper (optional, for heat)
08 - 190g all-purpose flour
09 - 60g cornstarch
10 - Oil for frying (vegetable or canola)

→ Waffles

11 - 250g all-purpose flour
12 - 2 tablespoons sugar
13 - 1 tablespoon baking powder
14 - 1/2 teaspoon salt
15 - 2 large eggs
16 - 420ml milk
17 - 75g melted butter
18 - 1 teaspoon vanilla extract

→ Spicy Honey Butter Sauce

19 - 120ml honey (or maple syrup)
20 - 60g butter, melted
21 - 1-2 teaspoons hot sauce (adjust to taste)
22 - Pinch of cayenne pepper (optional)

# Instructions:

01 - In a large bowl, combine buttermilk, salt, pepper, garlic powder, paprika, and cayenne (if using). Add chicken thighs and marinate for at least 30 minutes or overnight in the refrigerator.
02 - Mix flour and cornstarch in a shallow dish. Remove chicken from buttermilk marinade, allowing excess to drip off. Dredge chicken pieces in the flour mixture, pressing lightly to ensure even coating.
03 - Heat oil in a deep skillet to 175°C over medium-high heat. Carefully add chicken pieces and fry for 5-7 minutes per side, or until golden brown and cooked through (reaching 74°C internal temperature). Transfer to a paper towel-lined plate to drain excess oil.
04 - In one bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, melted butter, and vanilla extract until well combined.
05 - Pour wet ingredients into dry ingredients and whisk until just combined (small lumps are acceptable). Pour batter into a preheated waffle iron and cook according to the manufacturer's instructions until golden and crisp.
06 - In a small saucepan over low heat, whisk together honey, melted butter, hot sauce, and cayenne pepper until thoroughly combined and warm. Adjust spice level to taste.
07 - Place a freshly cooked waffle on each plate and top with a piece of fried chicken. Generously drizzle the spicy honey butter sauce over the chicken and waffles. Serve immediately while hot.

# Notes:

01 - For crispier chicken, allow it to rest on a wire rack instead of paper towels.
02 - The chicken can be marinated overnight for more flavor penetration.
03 - Leftover waffles can be frozen and reheated in a toaster.
