Gordon Ramsay Key Lime Pie (Print Version)

# Ingredients:

→ Crust

01 - 1½ cups graham cracker crumbs
02 - 4 tablespoons melted unsalted butter

→ Filling

03 - 3 large eggs, yolks and whites separated
04 - 1 large egg, beaten
05 - One 14-ounce can sweetened condensed milk
06 - ⅓ cup fresh lime juice (preferably from Key limes)
07 - 1 tablespoon finely grated lime zest, plus more for garnish

→ Topping

08 - ½ cup cold heavy cream or heavy whipping cream
09 - 1 tablespoon confectioners' sugar
10 - ¼ teaspoon vanilla extract
11 - Lime slices, for garnish

# Instructions:

01 - Preheat the oven to 160°C. Mix graham cracker crumbs and melted butter. Press into a 9-inch (23 cm) pie plate and bake for 15 minutes. Cool for 10 minutes.
02 - Whisk egg yolks and the whole egg in a bowl until thick. Add condensed milk, lime juice, and lime zest. Mix well.
03 - Beat egg whites until stiff. Fold into the lime mixture. Pour filling into the crust and bake for 13–15 minutes. Cool completely, then refrigerate for 6 hours or overnight.
04 - Whip heavy cream, sugar, and vanilla until thick.
05 - Top the pie with whipped cream, lime zest, and lime slices before serving.

# Notes:

01 - For best results, refrigerate the pie overnight before serving to allow flavors to fully develop.
