Greek Feta Phyllo Rolls (Print Version)

# Ingredients:

→ For the Rolls

01 - 8 oz feta cheese, crumbled
02 - 1 cup ricotta cheese
03 - 1 teaspoon fresh thyme leaves (optional)
04 - 6 sheets phyllo pastry, halved lengthwise
05 - ¼ cup melted butter or olive oil

→ For the Chili Honey

06 - ¼ cup honey
07 - ½ teaspoon red chili flakes

# Instructions:

01 - Mix feta, ricotta, and thyme until well combined.
02 - Brush phyllo strips with butter, add filling, fold sides and roll. Place seam-side down.
03 - Brush tops with butter, bake at 400°F for 15-20 minutes until golden.
04 - Warm honey with chili flakes 1-2 minutes to infuse flavors.

# Notes:

01 - Keep phyllo covered with damp towel while working
02 - Can be made ahead and refrigerated before baking
03 - Can substitute ricotta with goat or cream cheese
