Greek Honey Baked Feta (Print Version)

# Ingredients:

→ Honey Baked Feta

01 - 125 g unsalted butter, melted and cooled
02 - 3 tbsp extra virgin olive oil
03 - 8 sheets filo pastry
04 - 4 slices feta cheese (1 cm thick, 10 cm x 8 cm)
05 - 250 ml good quality honey
06 - Black sesame seeds, for garnish

# Instructions:

01 - Preheat a fan-forced oven to 180°C (320°F).
02 - Melt the butter in a heatproof jug using the microwave in 10-second bursts or on the stovetop. Allow to cool slightly before mixing with olive oil. Set aside.
03 - Place 1 sheet of filo pastry on a workbench and brush with the butter mixture. Place another sheet on top and brush again.
04 - Place one slice of feta at one end of the pastry. Fold the pastry over half the top of the feta, brush with more butter, and roll until nearly sealed. Brush the remaining edge and fold over to seal.
05 - Trim the ends of the pastry into triangles using a sharp knife. Brush the edges with butter and fold over the back of the feta parcel to fully seal.
06 - Place the parcels on a baking tray. Brush with remaining butter, sprinkle with sesame seeds, and bake for 15 minutes or until golden.
07 - Serve warm with a drizzle of honey and a sprinkle of additional sesame seeds.

# Notes:

01 - Filo pastry should be thawed for 1 hour if frozen and kept covered with a clean kitchen towel during use to prevent drying out.
02 - Greek feta is preferred, but if using Australian feta, note it is saltier.
03 - You can prepare these parcels in advance and freeze them before baking. Thaw for 30 minutes before baking as usual.
