Hawaiian BBQ Chicken & Pineapple (Print Version)

# Ingredients:

→ Protein

01 - 2 boneless skinless chicken breasts, cut into 2.5 cm cubes

→ Produce

02 - 1 ½ cups fresh pineapple chunks
03 - 1 red bell pepper, chopped
04 - 1 green bell pepper, chopped
05 - ½ red onion, chopped
06 - Green onions or cilantro for garnish (optional)

→ Condiments & Oils

07 - ½ cup BBQ sauce
08 - 1 tbsp olive oil
09 - Salt and pepper to taste

→ For Serving

10 - Cooked rice (optional)

# Instructions:

01 - Preheat your grill to medium-high heat or oven to 200°C (400°F).
02 - Cut 4 large sheets of heavy-duty aluminum foil. Divide chicken, pineapple, bell peppers, and onions evenly among the sheets.
03 - Drizzle each portion with olive oil, season with salt and pepper, and add 2 tablespoons of BBQ sauce to each packet. Gently toss ingredients to ensure even coating.
04 - Fold up each foil packet tightly, ensuring edges are sealed well to contain steam. Grill for 15-18 minutes or bake in the oven for 20-22 minutes, until chicken reaches an internal temperature of 75°C (165°F).
05 - Carefully open packets (beware of hot steam) and garnish with chopped green onions or cilantro. Serve immediately, over rice if desired.

# Notes:

01 - For juicier chicken, marinate in a tablespoon of BBQ sauce for 30 minutes before assembling packets.
02 - Packets can be assembled up to 4 hours ahead and refrigerated until ready to cook.
