Start by pouring warm water (110°F) into a large bowl. Dissolve the sugar in the water, then sprinkle yeast over the top. Let it sit for about 5 minutes until it becomes foamy and aromatic - this means your yeast is alive and ready to work!

Add flour, salt, and olive oil to your yeast mixture. Knead everything together until you have a smooth, elastic dough - this usually takes about 7-10 minutes of working the dough. Place it in a greased bowl, cover with a kitchen towel, and let it rise in a warm spot for about an hour, or until it's doubled in size.

Once your dough has risen, turn it out onto a floured surface and roll it into a large rectangle about ¼ inch thick. Spread a layer of pizza sauce across the dough, leaving a small border around the edges. Sprinkle generously with shredded mozzarella, then arrange pepperoni slices (and any other toppings you like) evenly over the cheese.

Starting from the long edge, roll the dough tightly into a log, similar to making cinnamon rolls. Use a serrated knife or unflavored dental floss to cut the log into 12 equal pieces. Place the rolls cut-side up in a greased baking dish.

Cover the rolls and let them rise again for about 30 minutes while you preheat your oven to 375°F. Bake for 25 minutes or until the rolls are puffy and golden brown on top.
