Irish Roasted Cabbage Pizza (Print Version)

01 - 1 tablespoon olive oil
02 - 1 large green cabbage
03 - 2 tablespoons whole grain mustard, spicy
04 - 1/2 pound corned beef deli slices
05 - 4 ounces Dubliner cheese
06 - 1/4 cup chopped scallions
07 - Salt and pepper, to taste

# Instructions:

01 - Preheat the oven to 450 degrees F. Line a large rimmed baking sheet with parchment paper and set aside.
02 - Hold the root end of the cabbage and slice into six 3/4-inch rounds. Lay the cabbage rounds on the baking sheet and brush with olive oil. Sprinkle generously with salt and pepper.
03 - Roast the cabbage steaks in the oven for 15-20 minutes, until crispy around the edges.
04 - Meanwhile, shred the Dubliner cheese. Chop the scallions. Slice the deli corned beef into 1/2-inch ribbons.
05 - Brush 1 teaspoon whole grain mustard over the top of each roasted cabbage steak. Top with corned beef and shredded cheese. Place back in the oven for 5 minutes to heat the corned beef and melt the cheese.
06 - Sprinkle with chopped scallions and serve warm.

# Notes:

01 - You can swap corned beef for pastrami and Dubliner cheese for sharp cheddar or any Irish cheese if unavailable.
