Italian Grilled Cheese Sandwiches (Print Version)

01 - ½ cup cottage cheese or ricotta cheese
02 - 1 teaspoon olive or canola oil
03 - 1 clove garlic, minced (or ¼ teaspoon granulated garlic)
04 - 1 teaspoon dried basil
05 - ½ teaspoon dried oregano
06 - ¼ teaspoon salt
07 - 1/16 teaspoon black pepper (or 1/8 teaspoon if you prefer more pepper)
08 - ¼ cup grated Parmesan cheese
09 - 8 ounces shredded mozzarella cheese (2 cups)
10 - 10 to 14 slices of bread (depending on bread size)
11 - 2 tablespoons butter, softened

# Instructions:

01 - If using large curd cottage cheese, blend until mostly smooth. Combine cottage or ricotta cheese with olive oil in a medium bowl.
02 - Add minced garlic, dried basil, oregano, salt, pepper, and Parmesan cheese to the bowl. Mix well until thoroughly combined.
03 - Fold in the shredded mozzarella cheese until evenly distributed throughout the mixture. For fuller flavor, prepare this mixture several hours ahead and refrigerate until ready to use.
04 - Lightly butter one side of each slice of bread. Place half of the slices, buttered side down, in a skillet or on a griddle over medium heat.
05 - Divide the cheese mixture evenly between the bread slices in the skillet, spreading it to cover the surface but not piling too high. Top with remaining bread slices, buttered side up.
06 - Cook over medium heat until the bottom slice is lightly browned. Carefully flip each sandwich and cook until the other side is golden brown and the cheese is completely melted.

01 - For a fuller flavor, mix up the sandwich filling several hours ahead of time and refrigerate until ready to make sandwiches.
02 - To reheat leftovers, place them in a lightly buttered skillet over low heat. Flip halfway through to crisp both sides.
