If using large curd cottage cheese, blend until mostly smooth. Combine cottage or ricotta cheese with olive oil in a medium bowl.

Add minced garlic, dried basil, oregano, salt, pepper, and Parmesan cheese to the bowl. Mix well until thoroughly combined.

Fold in the shredded mozzarella cheese until evenly distributed throughout the mixture. For fuller flavor, prepare this mixture several hours ahead and refrigerate until ready to use.

Lightly butter one side of each slice of bread. Place half of the slices, buttered side down, in a skillet or on a griddle over medium heat.

Divide the cheese mixture evenly between the bread slices in the skillet, spreading it to cover the surface but not piling too high. Top with remaining bread slices, buttered side up.

Cook over medium heat until the bottom slice is lightly browned. Carefully flip each sandwich and cook until the other side is golden brown and the cheese is completely melted.
