01 - 12 mini peppers
02 - 1 lb ground beef

04 - 1/2 tsp black pepper

06 - 1 tsp Italian seasoning

08 - 1 tsp ground cumin
09 - 1 small onion, grated, with juice
10 - 1 large egg white
11 - 1/2 cup shredded mozzarella

# Instructions:

01 - Preheat oven to 350°F (175°C). Spray a baking sheet with olive oil spray to prevent sticking.
02 - In a bowl, combine ground beef, salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, grated onion with its juice, and egg white. Mix thoroughly until all ingredients are evenly incorporated.
03 - Cut each mini pepper in half lengthwise and remove seeds to create a cavity. Stuff each pepper half with the ground beef mixture, leveling the top flat.
04 - Place the stuffed peppers on the prepared baking sheet. Bake for 20 minutes, or until the peppers soften and the ground beef is fully cooked.
05 - Top each pepper with shredded mozzarella cheese. Bake for an additional 3-4 minutes, until the cheese melts. Optionally, garnish with chopped parsley before serving.

01 - Serving size is 2 peppers (4 halves).
02 - Adjust salt in the ground beef mixture to taste, considering the cheese adds saltiness.
03 - If fresh onion is unavailable, substitute with 2 tsp onion powder for similar flavor.
