In a bowl, combine ground beef, salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, grated onion with its juice, and egg white. Mix thoroughly until all ingredients are evenly incorporated.

Cut each mini pepper in half lengthwise and remove seeds to create a cavity. Stuff each pepper half with the ground beef mixture, leveling the top flat.

Place the stuffed peppers on the prepared baking sheet. Bake for 20 minutes, or until the peppers soften and the ground beef is fully cooked.

Top each pepper with shredded mozzarella cheese. Bake for an additional 3-4 minutes, until the cheese melts. Optionally, garnish with chopped parsley before serving.
