Crispy Loaded Potato Cheese Sticks (Print Version)

# Ingredients:

→ Core Ingredients

01 - 3 russet potatoes, cooked and cubed
02 - ½ cup sour cream
03 - ¼ cup bacon, diced
04 - ¼ cup green onion, diced
05 - 1 block cheddar cheese, cut into strips
06 - 1 teaspoon salt
07 - ½ teaspoon pepper

→ Coating

08 - ⅔ cup cornstarch
09 - 100 g panko breadcrumbs
10 - Flour for coating
11 - Egg for coating

→ Frying

12 - 1 litre vegetable, canola, or peanut oil

# Instructions:

01 - Combine cooked potatoes, bacon, green onions, sour cream, salt, and pepper. Mash until mostly smooth.
02 - Flatten potato mixture, wrap around cheese strips, forming balls. Ensure cheese is fully covered.
03 - Roll each stick in flour, then beaten egg, finally in cornstarch-panko mixture.
04 - Heat oil to 350°F. Fry sticks for 3 minutes until golden brown. Drain on paper towels.

# Notes:

01 - Can be baked at 400°F for 15 minutes instead of frying
02 - Refrigerate formed sticks 30 minutes before cooking for better stability
03 - Can substitute cheddar with mozzarella or pepper jack cheese
