Mediterranean Appetizer Pinwheels (Print Version)

# Ingredients:

→ Base

01 - 8 oz (225g) cream cheese, softened
02 - 1 cup frozen chopped spinach, thawed and squeezed dry
03 - 1 cup marinated artichoke hearts, chopped
04 - 1/2 teaspoon kosher salt
05 - 1/2 teaspoon black pepper
06 - 1/2 teaspoon garlic powder
07 - 17 oz (480g) package frozen puff pastry, thawed according to package directions

→ Fillings

08 - 1 cup crumbled feta cheese
09 - 1 cup sliced kalamata olives
10 - 1 cup jarred roasted red peppers, diced
11 - 2 cups shredded Swiss cheese

# Instructions:

01 - Preheat the oven to 400°F (200°C). Line baking sheets with parchment paper.
02 - In a large bowl, combine the softened cream cheese, spinach, artichoke hearts, salt, pepper, and garlic powder. Mix on low speed with an electric mixer until thoroughly incorporated.
03 - Lay one sheet of puff pastry on a flat surface and spread with half the cream cheese mixture. Evenly distribute half of the feta, olives, red peppers, and Swiss cheese over the surface. Roll tightly into a log and refrigerate for 10 minutes to firm for easier slicing.
04 - Repeat the assembly process with the remaining puff pastry sheet and filling ingredients.
05 - Cut each chilled log into 1/2-inch thick slices and place pinwheels 1 inch apart on the prepared baking sheets.
06 - Bake for 16-20 minutes, or until golden brown. Serve warm or at room temperature. Store any leftovers in the refrigerator.

01 - These Mediterranean pinwheels can be assembled up to 24 hours in advance and refrigerated before slicing and baking.
