Mediterranean Salmon Bake Dinner (Print Version)

# Ingredients:

01 - 2 lb salmon filet
02 - 1 tablespoon avocado oil
03 - 1 teaspoon sea salt
04 - 1 teaspoon garlic powder
05 - 1/2 red onion, finely chopped
06 - 8.5 ounces sun-dried tomatoes, drained and chopped
07 - 5 ounces baby spinach
08 - 6 ounces feta cheese crumbles
09 - 1/3 cup pesto sauce (optional)

# Instructions:

01 - Preheat the oven to 400 degrees Fahrenheit.
02 - Place the salmon filet on a parchment-lined baking sheet. Drizzle with avocado oil and evenly coat using a brush. Season with sea salt and garlic powder.
03 - Bake in the center of the oven for 10 minutes.
04 - While the salmon bakes, heat a skillet with a bit more avocado oil over medium heat. Add the onion and sauté until soft, about 5-8 minutes.
05 - Add sun-dried tomatoes and spinach to the skillet, cover and cook until the spinach wilts.
06 - Mix in the feta cheese and heat until slightly melted.
07 - Remove the salmon from the oven, evenly top with the spinach mixture, and return to the oven. Bake for another 8-10 minutes, or until the salmon reaches an internal temperature of 145 degrees Fahrenheit.
08 - Drizzle with pesto sauce if using and allow to rest before serving.
