Mexican White Trash Casserole (Print Version)

# Ingredients:

→ Base Layers

01 - 1 bag Nacho Doritos, lightly crushed
02 - 2 cups cooked shredded chicken (rotisserie recommended)
03 - 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)

→ Creamy Filling

04 - 1 can cream of chicken soup
05 - 1 can Ro'tel tomatoes with green chilies
06 - ½ cup sour cream
07 - ½ cup milk
08 - ½ package taco seasoning

# Instructions:

01 - Preheat oven to 350°F (175°C) and grease a 2-quart casserole dish.
02 - In a large mixing bowl, combine the shredded chicken, cream of chicken soup, Ro'tel tomatoes, sour cream, milk, and taco seasoning. Mix thoroughly until evenly incorporated.
03 - Spread half of the crushed Doritos evenly across the bottom of the prepared casserole dish.
04 - Spoon half of the chicken mixture over the Dorito base layer.
05 - Add remaining crushed Doritos, followed by the rest of the chicken mixture. Finish with a generous layer of shredded cheese on top.
06 - Cover with aluminum foil and bake for 25 minutes. Remove foil and continue baking for an additional 10 minutes until cheese is melted and edges are golden and crispy.
07 - Allow to rest for 5 minutes before serving. Optionally garnish with additional crushed Doritos, chopped green onions, or a dollop of sour cream.

# Notes:

01 - For crispier texture, avoid crushing Doritos too finely
02 - Use store-bought rotisserie chicken to save preparation time
03 - Adjust spiciness by selecting mild, medium, or hot Ro'tel tomatoes
04 - Freshly shredded cheese melts better than pre-packaged varieties
