Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Lay out one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Place another sheet on top and brush again, repeating until 4 layers are formed.

Cut the layered phyllo into strips about 3 inches wide. Place a piece of feta at the end of each strip.

Roll the feta up in the phyllo, folding the edges to seal and form a package. Arrange the rolls seam-side down on the prepared baking sheet.

Brush the outside of each roll with melted butter and bake for 20-25 minutes, or until golden and crispy.

Warm honey gently in a saucepan over low heat. Stir in chili flakes and apple cider vinegar.

Drizzle the baked rolls generously with the prepared chili honey and garnish with parsley if desired. Serve warm.
