Slice the dates open and remove the pit. Stuff them with 1/2 teaspoon of pistachio butter each.

Heat the dark chocolate in a double boiler (or microwave) until melted.

Use tongs to coat the stuffed dates in melted chocolate one by one, and place them onto a parchment-lined board.

Sprinkle the stuffed dates with chopped pistachios and refrigerate for 20 minutes until the chocolate is set.
