Pistachio Butter Stuffed Dates (Print Version)

01 - 18 soft Sukari dates
02 - 9 teaspoons pistachio butter
03 - 1/4 cup chopped pistachios
04 - 3/4 cup dark chocolate couverture (65%)

# Instructions:

01 - Slice the dates open and remove the pit. Stuff them with 1/2 teaspoon of pistachio butter each.
02 - Heat the dark chocolate in a double boiler (or microwave) until melted.
03 - Use tongs to coat the stuffed dates in melted chocolate one by one, and place them onto a parchment-lined board.
04 - Sprinkle the stuffed dates with chopped pistachios and refrigerate for 20 minutes until the chocolate is set.

# Notes:

01 - For best results, use Sukari dates as they are soft and ideal for stuffing.
02 - You may substitute dark couverture chocolate with chocolate chips or baking chocolate, but adding a teaspoon of coconut oil can improve consistency.
03 - Store the stuffed dates in the fridge for up to one week.
