01 - 4 cups shredded pepper jack cheese
02 - 2-3 diced jalapenos (seeds removed)
03 - ½ cup flour
04 - 1 egg
05 - 1 cup milk
06 - 1 ½ cups bread crumbs
07 - 1 teaspoon cayenne pepper
08 - 1 teaspoon paprika
09 - 1 teaspoon garlic powder
10 - Oil for frying

# Instructions:

01 - In a large bowl, stir shredded pepper jack cheese and diced jalapenos together.
02 - Shape the mixture into balls about 1 ½ inches in diameter. Freeze for 30-60 minutes.
03 - Heat oil in a deep pot to 350 degrees Fahrenheit.
04 - In a separate bowl, combine bread crumbs, cayenne pepper, paprika, and garlic powder.
05 - Set up three bowls: one with flour, one with a mixture of egg and milk, and the third with the bread crumbs mixture.
06 - Roll the cheese balls in flour, then in the milk and egg mixture, and finally in the bread crumbs.
07 - Fry a few balls at a time for 3-4 minutes until golden brown.
08 - Drain the fried bites on paper towels before serving.

01 - Use a thermometer to monitor and maintain oil temperature at 350 degrees Fahrenheit.
02 - If using a milder cheese, consider cheddar or Monterey Jack instead of pepper jack.
03 - Freezing the cheese balls prevents them from melting too quickly during frying.
04 - Fry in small batches to avoid lowering the oil temperature.
05 - Keep fried bites warm in an oven set to 200 degrees Fahrenheit until ready to serve.
