Red Velvet Sandwich Cookies (Print Version)

# Ingredients:

→ Cookie Base

01 - 1 box red velvet cake mix
02 - 2 large eggs
03 - ⅓ cup butter, melted and cooled
04 - 2 teaspoons vanilla extract
05 - ½ cup powdered sugar for rolling

→ Cream Cheese Frosting

06 - 4 ounces cream cheese, softened
07 - 4 tablespoons unsalted butter, softened
08 - 1 teaspoon vanilla extract
09 - 2 cups powdered sugar

# Instructions:

01 - Preheat oven to 375°F. Line baking sheets with parchment paper.
02 - Mix cake mix, eggs, melted butter, and vanilla until well combined.
03 - Scoop 1 tablespoon dough, roll in powdered sugar. Place on sheet 3 inches apart.
04 - Bake 7-9 minutes until cracked and set. Cool 10 minutes on sheet, then transfer to rack.
05 - Beat cream cheese and butter until smooth. Add vanilla and gradually mix in powdered sugar. Whip 2 minutes.
06 - Spread 2 teaspoons frosting on cookie bottom, top with second cookie to make sandwich.
