Simple Honey Cookies (Print Version)

01 - 100 g (3.5 oz) butter, room temperature
02 - 90 g (3.1 oz, ½ cup) white sugar
03 - 175 g (6.1 oz, 1.4 cups) all-purpose flour
04 - 2 tsp vanilla powder or vanilla extract
05 - 1/2 tsp baking powder
06 - 3 tbsp honey or 2 tbsp golden syrup (for toffee flavor)

# Instructions:

01 - Start by preheating your oven to 180°C (356℉) to make sure it's nice and hot when your cookies are ready to bake.
02 - In a mixing bowl, cream together the room temperature butter and sugar until smooth and well combined. This creates the perfect foundation for your cookies.
03 - Now add all your remaining ingredients - the flour, vanilla, baking powder, and honey (or golden syrup if you want that rich toffee flavor). Mix everything together until you have a smooth, uniform dough that holds together nicely.
04 - Divide your cookie dough into 3 equal portions. Roll each portion into a log shape with your hands - nothing too fancy, just an even roll that will give you nicely shaped cookies.
05 - Place the dough rolls onto a baking tray that's been lined with non-stick baking paper. Remember these cookies will spread quite a bit during baking, so leave plenty of space between each roll (I usually only fit two rolls on one standard tray).
06 - Gently press down on each roll with your fingers to slightly flatten them. Pop them into your preheated oven and bake for 12-14 minutes, or until they turn a beautiful golden color.
07 - This step is crucial! As soon as the cookies come out of the oven, while they're still warm and slightly soft, carefully cut them diagonally into slices. You need to do this while they're warm or they'll crumble when you try to cut them later.
08 - Let your freshly cut cookies cool completely on the baking tray. Once they've cooled down, they'll have that perfect crisp-yet-tender texture. Now they're ready to be enjoyed with a cup of tea or coffee!
