Spicy Potato Tacos (Print Version)

# Ingredients:

→ Potato Filling

01 - 2 pounds potatoes
02 - 2 tablespoons vegetable oil
03 - 2 large garlic cloves, minced
04 - 1 tablespoon chili powder
05 - 1 teaspoon salt
06 - ½ teaspoon cumin powder
07 - ½ teaspoon coriander powder
08 - ¼ teaspoon cayenne pepper powder

→ Sauce

09 - ¼ cup sour cream or plain yogurt
10 - ¼ cup mayonnaise
11 - ½ cup finely minced cilantro
12 - ½ jalapeño pepper, minced
13 - 1 teaspoon lemon juice
14 - ⅛ teaspoon salt
15 - 2-4 teaspoons water

→ For Serving

16 - 8 corn tortillas
17 - Pico de gallo

# Instructions:

01 - Dice potatoes, cook with spices and garlic in oil for 15 minutes until tender.
02 - Mix sour cream, mayo, cilantro, jalapeño, lemon juice, and salt. Thin with water if needed.
03 - Layer warmed tortillas with potatoes, sauce, and pico de gallo.
