Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.

In a mini food processor, add the cottage cheese and pulse until smooth.

In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese. Mix until dough forms. Shape the dough into a thick 6-inch-long log.

Divide the dough into 6 equal pieces. Shape each piece into a flat circle and poke a hole in the middle with your finger.

Place shaped pieces on the prepared baking sheet. Brush tops with egg wash and bake for 22-25 minutes or until golden brown.

Transfer flagels to a wire rack to cool completely.
