Spinach Cottage Cheese Flagels (Print Version)

# Ingredients:

01 - 1 cup cottage cheese
02 - 1 cup + 2 tablespoons all-purpose flour
03 - 3 teaspoons baking powder
04 - 1/2 teaspoon salt
05 - 1 tablespoon olive oil
06 - 2 ounces baby spinach, finely chopped
07 - 1/2 cup shredded mozzarella cheese

→ Egg Wash

08 - 1 egg, lightly beaten

# Instructions:

01 - Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.
02 - In a mini food processor, add the cottage cheese and pulse until smooth.
03 - In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella cheese. Mix until dough forms. Shape the dough into a thick 6-inch-long log.
04 - Divide the dough into 6 equal pieces. Shape each piece into a flat circle and poke a hole in the middle with your finger.
05 - Place shaped pieces on the prepared baking sheet. Brush tops with egg wash and bake for 22-25 minutes or until golden brown.
06 - Transfer flagels to a wire rack to cool completely.
