Strawberry Cheesecake Crepe Rolls (Print Version)

# Ingredients:

→ Filling

01 - 8 oz cream cheese, softened
02 - 1/4 cup granulated sugar
03 - 1 teaspoon vanilla extract
04 - 1 cup heavy whipping cream
05 - 1 cup fresh strawberries, diced
06 - 2 tablespoons granulated sugar

→ Base

07 - 1 1/2 cups crushed shortbread cookies or graham crackers
08 - 1/4 cup unsalted butter, melted
09 - 6 large crepes or thin cake layers

→ Topping

10 - Powdered sugar for dusting

# Instructions:

01 - Beat cream cheese, sugar, and vanilla until smooth. Separately whip heavy cream to stiff peaks and fold into cream cheese mixture.
02 - Mix diced strawberries with sugar and let sit 10 minutes to macerate.
03 - Combine crushed cookies with melted butter until mixture resembles wet sand.
04 - Layer each crepe with filling, crumb mixture, and macerated strawberries. Roll tightly into sushi shape.
05 - Wrap rolls in plastic and refrigerate for at least 1 hour.
06 - Slice chilled rolls into 1-inch pieces and dust with powdered sugar.
