Sumac Onions Salt Vinegar (Print Version)

# Ingredients:

01 - 1 large red onion, thinly sliced
02 - 2 teaspoons sumac
03 - 1/2 teaspoon salt
04 - 1 tablespoon red wine vinegar or lemon juice
05 - 1 tablespoon extra virgin olive oil
06 - 1 tablespoon fresh parsley, chopped

# Instructions:

01 - Add the onion slices, sumac, and salt to a medium bowl. Use your hands to gently massage the salt and sumac into the onions for about 30-60 seconds.
02 - Add the vinegar, oil, and parsley. Mix together, then cover and set aside to marinate for at least 20 minutes before serving or store in an airtight container for up to four days.
03 - Serve as a simple side salad or enjoy as a condiment. Add onions to burgers, sandwiches, wraps, salads, etc.

# Notes:

01 - The onions will continue to soften over time. Drain excess liquid before serving if needed.
02 - Red wine vinegar enhances the bright pink/purple color of red onions, but lemon juice can be used as an alternative.
03 - Substitute parsley with mint or cilantro for variation.
04 - Using white or yellow onions instead of red will result in a less spicy/sweet flavor. Consider adding a pinch of sugar if substituting.
