Add the onion slices, sumac, and salt to a medium bowl. Use your hands to gently massage the salt and sumac into the onions for about 30-60 seconds.

Add the vinegar, oil, and parsley. Mix together, then cover and set aside to marinate for at least 20 minutes before serving or store in an airtight container for up to four days.
