First, you'll need to make my amazing Braised Oxtail dish since we'll use the shredded meat directly on this pizza. Follow that recipe to cook the oxtail properly, then come back here. Once the oxtail is braised, let it cool until you can handle it comfortably. Pull the meat apart by hand, shredding it into a large bowl and set aside.

Preheat your oven to a hot 550°F. Ladle your oxtail sauce onto the dough in a circular motion, covering everything except for a half-inch border around the edge. Sprinkle generously with mozzarella cheese, then top with your shredded oxtail meat. Give the crust edge a quick brush with truffle oil, then slide your pizza onto the middle rack of your preheated oven. Bake until the cheese is completely melted and the crust turns golden brown, about 8-12 minutes.
