Thaw frozen phyllo dough by keeping it at room temperature for 2-3 hours before beginning.

In a medium mixing bowl, combine crumbled feta cheese, grated mozzarella, and chopped parsley.

Place one phyllo sheet on a flat surface. Cover remaining sheets with a damp kitchen towel to prevent drying. Brush the phyllo sheet with water, then place another sheet on top and brush with water again. Cut into 4 equal squares.

Position a phyllo square like a diamond. Place about 1½ tablespoons of cheese mixture on the bottom edge, leaving room at each side. Fold the bottom tip over the cheese, then fold both sides inward. Roll tightly upward, brushing the top edge with water to seal. Repeat with remaining phyllo squares.

Heat oil in a pan (about 2 inches deep) and fry rolls in batches for 5-7 minutes until golden on all sides. Transfer to paper towels to remove excess oil. Serve warm.
