Grilled Pesto Paneer Sub (Print Version)

# Ingredients:

01 - 250g paneer, sliced into 4 equal portions
02 - 4 multigrain sub rolls
03 - Basil pesto sauce, to taste
04 - 4 lettuce leaves
05 - 2 tomatoes, sliced into 8 rounds
06 - 1 cucumber, sliced into 8 rounds
07 - Tomato ketchup, to taste
08 - Butter, for grilling

# Instructions:

01 - Prick the sliced paneer pieces with a fork and coat them thoroughly with pesto sauce. Heat a skillet over medium heat and add butter. Grill the paneer slices on both sides until they develop light brown spots, approximately 2-3 minutes per side.
02 - Slice each sub roll horizontally. Spread pesto sauce on the bottom half of each roll. Layer with the grilled pesto paneer, cucumber slices, tomato slices, and a lettuce leaf. Spread tomato ketchup on the top half of each roll and place it over the assembled ingredients, ketchup side down.
03 - Heat a sandwich maker or skillet pan. Place the assembled sandwiches and grill until golden and crisp on the outside. Serve warm.

# Notes:

01 - These sandwiches can be prepared ahead of time and grilled just before serving.
02 - Store-bought pesto works well, but homemade will elevate the flavor.
